I've been scouring the internet and many blogs searching for recipes. I'm looking for quick meals, snacks, you name it. I've found a few that sound super easy, but not so tasty...a few that look reeeeally yummy but not too healthy...I need some kind of balance here. I was hoping we could all help each other out. Would anyone be willing to jump in and share some ideas? Any kind of quick meals, recipes for dinner, snacks, etc... Where I'm really needing help is dinner b/c I'm so tired by the time I'm home that I don't want to spend a lot of time in the kitchen. If I can find something good for lunches to take to work, that would be great too. I've generally been having fruit and string cheese, a protein shake, or a homemade protein bar for snacks. I'm also trying to keep my mouth busy during the day by chewing SF gum. One thing that's really keeping me pepped and full of energy during the day is ROCKSTAR energy drink. I drink the one in the blue can that has zero carbs, no sugar, and only 20cals per can. It also contains 240mg of caffeine which would explain the energy. Anyone have any thoughts on this? I have no clue how much caffeine is too much...all I know is I like it! LOL
Something I made for dinner one night and took for lunch a couple days was baked spagetti squash. I topped it with low sugar spagetti sauce and LF shredded cheese. SOOOO yummy. Just like spagetti, but not as soft, it had a slight crunch to it. You could probably bake it a bit longer. I baked it cut lengthwise and placed upside-down on a baking sheet for about 50-60min. Only problem is that I should've added lean ground turkey or beef to it for protein. Instead I ate FF cottage cheese on the side.
I'm going to try out some of these recipes and if they're good I'll post the recipes. Please share any/all ideas! :)

OH! I love spaghetti squash. I wish I had some ideas for you. I'm just not very creative when it comes to food. I'm lucky because my husband cooks almost every night. Not always the healthiest of meals, but if I'm feeling really good, I only eat the healthy stuff. If I'm feeling BLAH, I eat everything.
Make a big pot of chili with turkey meat. Pour over brown rice or eat with ff crackers. I even put a little ff shredded cheese on top. VERY easy to put in individual containers for lunches.
Roast with potatoes, carrots in the crock pot. we use the canned white potatoes and the baby carrots and Lipton french onion soup mix. The smell when you walk in the door at the end of the day is so good! Also a great meal to make an individual meal for lunch.
We make a big pot of taco meat with the leanest ground beef - we cook the meat and then rinse it with hot water to get all the extra grease off before we add the seasonings. Then I make a big taco salad with lettuce, refried bns, meat, ff cheese and baked tostitos on top, all in portion sizes of course. When I pack containers for lunch I put the meat and refried beans together and then load another container with salad mix. I crush up the tostitos and put them in a container and then add them all together for lunch at work, shake it up and devour!
Turkey burgers are fast and easy - I usually have hubby grill a few extra so I have them ready available for lunches - throw on a slice of cheese and warm in the microwave. Add a side salad and you are good to go.
My snack meals usually are a RTD with some sort of carb, sometimes I pack cereal or a few rice cakes or I will have yogurt with grape nut cereal mixed in. The Detour "caramel peanut" bars are so good, they curb my chocolate craving cuz they closely resemble a snickers in my opinion. I will have a banana or apple with natural peanut butter.
All of these are easy, yummy meals that you can store in individual tupperware for fast easy lunches. Or have for portion size easy grab dinners. I get a lot of my food ideas from the Eating for life book, or just take recipes that we have always made and just make them lower in fat and calories. Anything in the crock pot rocks for us workin gals!!!

Spaghetti squash sounds yummy! My co-worker cooks it in the microwave. Can't remember for how many minutes though.
I've been making turkey tacos recently. Just cook ground turkey with onions, bell peppers, & taco mix. Sometimes, I mix in taco sauce too. I cook it on the weekend and place in individual containers. I eat it with ww tortilla, lf cheese, lf/ff sour cream, and lettuce (already cut & pre-washed).
Jshelton also posted a tortilla soup recipe in tracker. It looks really good and easy to make. I might actually make it this weekend.
This may sound gross but my favorite thing is to put a cup of shredded cabbage (pre-packaged) a 1/2 tsp vinegar and 1 packet of splenda then put my tuna in with it and stir it all up. It taste sweet and crunchy at the same time. I hate coleslaw but this is so good. Makes me think I am getting real tuna salad. Try it and see what you think.I eat that for my last meal of the day.
As far as lunches, Turkey burgers, or chicken breast mostly but I am always looking for something different. I will see if I have some recipes you might like and I will post them.
